Laura Santtini’s Lemon Pesto Scallops

After a non-stop 48 hours at Spoon HQ, Sarah found herself with an empty fridge and a dinner guest yesterday evening, which isn’t a great combination. However, after a hunt through the (almost bare) cupboards and a quick trip to the shops for some scallops and pesto, Laura’s Lemon Pesto Scallops from her latest book- Flash Cooking were rustled up within seconds.

Pasta and courgette drizzled with olive oil and a sprinkling of salt and chilli flakes provided a delicious accompaniment to Laura’s recipe and even managed to please last week’s less than impressed diner who gobbled it all up- without leaving us any leftovers.
