After Rene Redzepi‘s first successful MAD foodcamp in Copenhagen’s last year, the challenge this year was to build on the work started last year and bring together farmers, scholars, foragers and chefs with the aim of sharing ideas and educating each other as to what’s next in the way we think about food.

With a programme featuring Ferran Adria, Dan Barber, Fergus Henderson, Trevor Gullivar , David Chang, Spoon’s Massimo Bottura  and a opening talk from Rene Redzepi  it was definitely a date not to be missed in any foodies diary.

Massimo’s talk was titled Cultural Consciousness and was accompanied by a short- ‘Old Hens Make Good Broth’ about old ladies making tortellini.
