On Sunday, London cookery school Divertimenti held a Preserves Masterclass at their Brompton Road complex with Laura Washburn– chef, author and preserving expert. I was lucky enough to be amongst the small group who learned how to preserve, creating 5 delicious chutneys and conserves which were taken home in exquisite little Le Parfait‘s Super Terrine Jars.
The class was split into two groups, with one tackling the Red Onion Relish, Lemon and Apple Curd and the other taking charge of the Dried Apricot & Tamarind Chutney and Pineapple Conserve with Rosemary and Vanilla. The Giardiniera (Italian mixed pickled vegetables- delicious when combined with green olives) was a real group effort, all under the watchful eye of Laura.
The class also enjoyed a light lunch and tasting of their work, with the Dried Apricot & Tamarind Chutney coming out a firm favourite.
