In 1995, Massimo Bottura opened Osteria Francescana in the medieval city centre of Modena. Today, Bottura talks about juxtaposing tradition and innovation: “…Thousands of years of history, we need to preserve that. But we need to also renew it… and project ourselves into the future.”
